Tuscan Tuna and White Bean Salad - 18g Carbs, 3g Fiber, 2g Sugar

There's no better reason to keep your pantry stocked with canned
water-packed tuna and cannellini or navy beans than this satifying,
fiber-rich Italian salad, which can be prepared in less than
10 minutes. Although commercially prepared dressing is perfectly
acceptable, vinaigrette made with a fruity olive oil and a good
red wine vinegar will taste even better. Sprinkle the top of
the salad with chopped flat parsley for a fresh, bright green
color contrast.

Serving Size: 1/2 cup

6 1/2oz canned water-packed tuna, drained and flaked
19oz can cannellini beans, of cooked white beans, rinsed and drained
1/3 cup sliced red onion rings
2 Tbsp green bell pepper, chopped
1/4 tsp fresh ground black pepper
1/3 cup prepared light Italian dressing

1. Combine the tuna, beans, onion, green pepper, and ground pepper.

2. Mix in the dressing and toss to combine. Chill before serving.
